A gastronomic adventure in Iloilo wouldn't be complete without the pantat or catfish barbecue from Zarraga. Being the “pantat capital” in the region, pantat is being sold in retail from well-known restaurants to alongside streets, cooked or alive along the town’s highway.
The Pantat Festival is Zarraga's biggest annual event which celebrates and aims to promote pantat production in the municipality. Clad in fishermen and catfish costumes, dancers imitate the complex movements of this black fish to the rhythm of the beating drums.
